What is ICUMSA 600 to 1200 brown sugar?
Known as brown sugar, Icumsa 600-1200 is 100% raw refined and is produced after the first crystallization of sugar cane. This sugar is thicker than white sugar, known as Icumsa 45, and its color is brownish. Raw brown sugar from sugar cane, when fully refined, contains about 70% white sugar. ICUMSA 800-1200 is the least refined sugar, with a sucrose content between 96-98%. Its dark brown color, high molasses content, and very coarse crystals make it suitable for further refining or industrial processes. It is not suitable for direct consumption and requires additional processing.
How Is Brown Sugar Made ?
Refined brown sugar is simply white sugar that has had molasses added back into it. Meanwhile, whole, unrefined brown sugar undergoes less processing than white sugar, allowing it to retain some of its molasses content and natural brown color.
Types of Brown sugar ?
There are two types of brown sugar: light and dark, and as expected, light brown sugar has less molasses content than its darker counterpart. Nutritionally, there’s no significant difference between the two. Dark brown sugar contains more molasses than light brown sugar. It has a deeper color and stronger flavor. The two can be used interchangeably, depending on your taste.
